- Ingredients
- 1 chicken breast per person
- Your favorite guacamole (store-bought is fine)
- 1 tomato
- 1 package bacon
- 1 medium-sized turnip per 2 people
- Directions
- Preheat oven to 350 degrees
- Turnip preparation
- Slice turnips into 1/4-inch chips (you’ll see some in pic that look like they are cut into fries, we tried both and the chips are much better!)
- Place turnips on a non-stick baking sheet sprayed with pam, drizzle with olive oil, salt and pepper to taste
- Guacamole preparation
- Small-dice tomato and mix with guacamole (we got spicy guacamole, which I would recommend)
- Chicken preparation
- Pound chicken breast flat, salt and pepper to taste
- Spread 1/4-inch of guacamole over chicken
- Roll chicken up
- Place 3 pieces of bacon on a baking sheet sprayed with pam
- Roll chicken in bacon
- Sprinkle some cayenne pepper over the top if you like spicy
- Bake chicken and turnips at 350 degrees for 30 minutes
- After 30 minutes carefully move chicken to top rack closest to broiler and broil for 5-7 minutes to crsip bacon
- Remove chicken from oven and move turnips to top rack and broil for 5 minutes
