BREADLESS STUFFING
We made this for support group years ago and it was a big hit! It’s a great dish to have for the holidays.
– 1 lb pork sausage (can use turkey sausage)
– ¼ cup celery, chopped
– ¼ cup onion, chopped
– 2 eggs
– 1 head cauliflower, coarsely chopped (about 2 cups)
– 1 Tbsp fresh parsley (1 tsp dried)
– 3 Tbsp fresh sage (1 ½ tsp dried)
– 3 Tbsp fresh thyme (1 ½ tsp dried)
– 1 Tbsp garlic
– 1/8 tsp salt
– 1/8 tsp pepper
Directions:
Preheat oven to 350˚F.
Cook sausage in skillet until browned, then add celery and onion and cook until softened. Drain Fat. Beat eggs in a bowl then add to sausage mixture. Add all remaining ingredients. Put mixture into an 8 x 8 baking dish and Bake for approximately 30 minutes.
Yields: 10 servings (1/2 cup = 1 serving)
